10 spring roll wrappers

1 cup shredded cabbage

1/2 cup grated carrots

1/2 cup bean sprouts

1/4 cup thinly sliced bell peppers (red and yellow)

1/4 cup chopped green onions

1/4 cup chopped cilantro

1 tablespoon minced garlic

1 tablespoon grated ginger

2 tablespoons soy sauce

1 teaspoon sesame oil

Salt and pepper to taste

Oil for frying

Prep the Filling: In a large mixing bowl, combine the shredded cabbage, grated carrots, bean sprouts, thinly sliced bell peppers, green onions, and cilantro.

    Flavor It Up: Add minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper to the veggie mixture. Toss everything together until well combined.

      Assembly Time: Place one spring roll wrapper on a flat surface, ensuring one corner is pointing towards you. Spoon 2 tablespoons of the veggie mixture near the bottom corner of the wrapper.

        Roll it Up: Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal the top corner with a dab of water. Repeat this process with the remaining spring roll wrappers and filling.

          Heat the Oil: In a deep frying pan or pot, heat oil over medium-high heat until it shimmers (about 350°F or 175°C).

            Fry the Spring Rolls: Carefully place 3-4 spring rolls in the hot oil, making sure not to overcrowd the pan. Fry for 3-4 minutes or until golden brown and crispy. Using a slotted spoon, remove them and place on paper towels to drain excess oil.

              Serve and Enjoy: Serve the crispy spring rolls hot with a side of soy sauce, hoisin sauce, or sweet chili sauce for dipping. Enjoy the crunch!
