Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, diced

1 cup plain Greek yogurt

1 tablespoon olive oil

2 tablespoons lemon juice

1 clove garlic, minced

1 teaspoon ground cumin

Salt and pepper, to taste

¼ cup red onion, finely chopped

¼ cup fresh parsley, chopped

¼ teaspoon paprika (for garnish)

Instructions

Prepare the Chickpeas: In a large mixing bowl, add the drained and rinsed chickpeas. Use a fork or potato masher to slightly mash about half of them - this will give the salad a nice texture.

Add Cucumber and Onion: Incorporate the diced cucumber and finely chopped red onion into the bowl with the chickpeas. Toss gently to mix.

Make the Yogurt Dressing: In a separate small bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, ground cumin, salt, and pepper until smooth and well-combined.

Combine Ingredients: Pour the yogurt dressing over the chickpea and cucumber mixture. Stir carefully until everything is thoroughly coated.

Add Fresh Herbs: Fold in the chopped fresh parsley for a burst of flavor and color.

Garnish: Transfer the salad to a serving bowl and sprinkle a pinch of paprika on top for an appealing finish.

Chill and Serve: For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld beautifully.
