8 oz (225g) high-quality dark chocolate (70% cocoa or more), chopped

1/2 cup (115g) unsalted butter, cut into pieces

3/4 cup (150g) granulated sugar

1/4 teaspoon fine sea salt

1 teaspoon pure vanilla extract

4 large eggs, at room temperature

1/2 cup (50g) unsweetened cocoa powder, sifted

Optional: Confectioners' sugar, fresh berries, and whipped cream for serving

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease an 8-inch (20cm) round cake pan with butter, then line the bottom with parchment paper for easy removal.

    Melt the Chocolate and Butter: In a medium heatproof bowl, combine the chopped dark chocolate and butter. Set over a saucepan of simmering water (double boiler method). Stir occasionally until melted and smooth. Remove from heat and let cool slightly.

      Mix Sugar, Salt, and Vanilla: Once the chocolate mixture has cooled a bit, whisk in the granulated sugar, salt, and vanilla extract until combined.

        Incorporate the Eggs: Add the eggs, one at a time, mixing well after each addition. The batter should become glossy and smooth.

          Add Cocoa Powder: Gently fold in the sifted cocoa powder using a spatula, ensuring not to overmix. The batter should be thick and rich.

            Bake the Cake: Pour the batter into the prepared cake pan, smoothing the top with a spatula. Bake in the preheated oven for 25-30 minutes, or until the top looks set and a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).
