Ingredients
  

For the Crepes:

1 cup all-purpose flour

2 large eggs

1 ½ cups whole milk

2 tablespoons melted butter

1/4 teaspoon salt

1 tablespoon fresh parsley, finely chopped

For the Seafood Filling:

1 cup cooked shrimp, chopped

1 cup cooked crab meat or imitation crab, shredded

1/2 cup scallops, chopped (if using)

1/2 cup cream cheese, softened

1/4 cup sour cream

1/2 cup shredded mozzarella cheese

2 tablespoons fresh lemon juice

1 tablespoon fresh dill, chopped

Salt and pepper, to taste

For the Creamy Sauce:

1 tablespoon olive oil

2 cloves garlic, minced

1 cup heavy cream

1/2 cup chicken or seafood broth

1 tablespoon Dijon mustard

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

Prepare the Crepes:

    - In a large mixing bowl, whisk together the flour and salt. In a separate bowl, beat the eggs with the milk and melted butter. Gradually add this mixture to the flour, whisking until smooth.

      - Stir in the parsley. Allow the batter to rest for about 30 minutes.

        Cook the Crepes:

          - Heat a non-stick skillet over medium heat and lightly grease it with butter. Pour enough batter into the pan to evenly coat the bottom (approximately 1/4 cup).

            - Cook for 1-2 minutes until the edges begin to lift and the bottom is slightly golden. Flip and cook for another minute. Transfer to a plate and repeat the process, stacking the cooked crepes with parchment paper in between to prevent sticking.

              Prepare the Seafood Filling:

                - In a mixing bowl, combine the shrimp, crab meat, scallops (if using), cream cheese, sour cream, mozzarella cheese, lemon juice, dill, salt, and pepper. Mix until well incorporated.

                  Make the Creamy Sauce:

                    - In a saucepan over medium heat, heat the olive oil and sauté the minced garlic until fragrant (1-2 minutes).

                      - Pour in the heavy cream and broth, stirring to combine. Add the Dijon mustard, and season with salt and pepper. Let it simmer for 3-5 minutes until slightly thickened.

                        Assemble the Crepes:

                          - Place a generous spoonful of the seafood filling onto each crepe and roll or fold them up. Arrange the filled crepes in a buttered baking dish.

                            Bake and Serve:

                              - Preheat your oven to 350°F (175°C). Pour the creamy sauce over the assembled crepes and bake for 15-20 minutes until heated through.

                                - Once out of the oven, garnish with fresh parsley and serve hot.
