8 oz (225g) bittersweet chocolate, chopped

4 oz (113g) milk chocolate, chopped

4 oz (113g) white chocolate, chopped

1 cup (240ml) heavy cream

1 tsp vanilla extract

1/4 cup (60ml) coffee liqueur (optional)

1/2 cup (60g) cocoa powder (for coating)

1/2 cup (90g) chocolate sprinkles (for coating)

1/2 cup (60g) finely chopped nuts (hazelnuts or almonds, for coating)

Instructions
 

Prepare the Chocolate Mixture: In a medium heatproof bowl, combine the chopped bittersweet, milk, and white chocolate. Set aside.

    Heat the Cream: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer (do not let it boil). Stir in the vanilla extract and coffee liqueur, if using.

      Combine Cream and Chocolate: Pour the hot cream over the chocolate mixture. Let it sit for about 3-4 minutes to soften the chocolate. Gently stir until all the chocolate is melted and the mixture is smooth and glossy.

        Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 2 hours or until the ganache is firm enough to scoop.

          Shape the Truffles: Once chilled, use a melon baller or a teaspoon to scoop out small portions of the ganache. Roll the scoops in your hands to form smooth balls.

            Coat the Truffles: Set up three shallow dishes - one with cocoa powder, one with chocolate sprinkles, and one with chopped nuts. Roll each truffle in your desired coating until fully covered.

              Chill Again: Place the coated truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up before serving.
