Dreamy White Chocolate Mousse

8 oz (225g) white chocolate, chopped

2 cups (480ml) heavy whipping cream, divided

3 large egg whites

1/4 cup (50g) granulated sugar

1 teaspoon vanilla extract

A pinch of salt

Melt the White Chocolate: Start by placing the chopped white chocolate in a heatproof bowl. Set this bowl over a pot of simmering water (double boiler method) and stir continuously until the chocolate has melted and is smooth. Remove from heat, and let it cool slightly.

    Whip the Cream: In a large mixing bowl, pour 1 1/2 cups (360ml) of the heavy whipping cream. Using an electric mixer, whip it on medium-high speed until soft peaks form. Once it's ready, gently fold in the melted white chocolate with a spatula, being careful not to deflate the cream.

      Whisk the Egg Whites: In another clean bowl, add the egg whites and a pinch of salt. Using a mixer, beat the egg whites on medium speed until soft peaks start to form. Gradually add the granulated sugar while continuing to beat until you reach stiff peaks. This will give the mousse its light and airy texture.

        Combine Everything: Gently fold the whipped egg whites into the white chocolate mixture in three additions, ensuring everything is well incorporated without losing too much air.

          Chill the Mousse: Spoon the mousse into individual serving dishes or glasses. Cover with plastic wrap and refrigerate for at least 4 hours, or until set.

            Prepare to Serve: Before serving, whip the remaining 1/2 cup (120ml) of heavy cream to soft peaks and spoon it over the mousse. Garnish with fresh berries or a sprig of mint for an extra touch of elegance.
