Ingredients

4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably Italian-style)

1/2 cup grated Parmesan cheese

1 cup marinara sauce

1 cup shredded mozzarella cheese

2 tablespoons fresh basil, chopped (or 1 teaspoon dried basil)

Salt and pepper to taste

Olive oil spray (or 2 tablespoons olive oil for drizzling)

Instructions

Preheat Oven: Begin by preheating your oven to 400°F (200°C).

Prepare Chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper.

Set Up Battering Station: In three separate shallow bowls, place flour in the first bowl, beaten eggs in the second, and the mixture of breadcrumbs and Parmesan cheese in the third.

Coat Chicken: Dredge each chicken breast in the flour, shaking off the excess, then dip them in the beaten eggs. Finally, coat them in the breadcrumb mixture, pressing firmly to ensure they adhere well to the chicken.

Arrange Chicken: Place the coated chicken breasts on a baking sheet lined with parchment paper. If using olive oil, lightly drizzle or spray the tops with olive oil for added crispiness.

Bake Chicken: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 75°C) and the breadcrumbs are golden and crispy.

Add Sauce and Cheese: Remove the chicken from the oven. Spoon marinara sauce over each breast, then sprinkle with shredded mozzarella cheese and chopped basil.

Broil for Finish: Return the chicken to the oven, switching to broil for an additional 3-5 minutes, or until the cheese is bubbly and lightly golden.

Serve: Let the chicken rest for a few minutes before serving. Garnish with additional basil and serve with a side of pasta or a fresh salad.
