Easy Baked Chicken Parmesan with Zucchini Noodles

For the Chicken:

4 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably Panko for extra crunch)

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (basil, oregano, thyme)

1 teaspoon salt

½ teaspoon black pepper

2 large eggs, beaten

1 cup marinara sauce

1 cup shredded mozzarella cheese

For the Zucchini Noodles:

4 medium zucchinis

1 tablespoon olive oil

2 cloves garlic, minced

Salt and pepper to taste

Fresh basil, for garnish (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Chicken: In a shallow bowl, mix the breadcrumbs, grated Parmesan, garlic powder, Italian herbs, salt, and pepper. In another bowl, beat the eggs. Dip each chicken breast first in the egg, then in the breadcrumb mixture, ensuring it's well coated.

      Bake the Chicken: Place the breaded chicken breasts on a parchment-lined baking sheet. Bake for about 20-25 minutes, until the chicken is cooked through (internal temperature should be 165°F or 75°C) and the coating is golden and crispy.

        Add Marinara and Cheese: Remove the chicken from the oven. Spoon a generous amount of marinara sauce over each piece and sprinkle mozzarella cheese on top. Return to the oven for an additional 5-7 minutes, until the cheese is melted and bubbly.

          Prepare Zucchini Noodles: While the chicken is baking, wash the zucchinis and spiralize them to create noodles (or use a vegetable peeler to create thin strips). Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

            Cook Zucchini Noodles: Add the zucchini noodles to the skillet, season with salt and pepper, and cook for about 3-5 minutes until just tender. Be careful not to overcook; you want them to retain a bit of crunch.

              Serving: Plate the zucchini noodles and top with the baked chicken Parmesan. Garnish with fresh basil if using.
