Ingredients

4 salmon fillets (6 oz each)

1 lb fresh asparagus, trimmed

3 tablespoons Dijon mustard

2 tablespoons honey

2 tablespoons olive oil

2 cloves garlic, minced

Juice and zest of 1 lemon

Salt and black pepper, to taste

Lemon wedges, for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baking Dish: Line a large baking sheet with parchment paper for easy cleanup.

Make the Marinade: In a small bowl, whisk together the Dijon mustard, honey, 1 tablespoon of olive oil, minced garlic, lemon juice, and lemon zest until smooth.

Season the Salmon: Place the salmon fillets on the prepared baking sheet, skin-side down. Season with salt and pepper, then brush the marinade evenly over each fillet.

Prepare the Asparagus: In a separate bowl, toss the trimmed asparagus with the remaining tablespoon of olive oil, salt, and pepper. Arrange the asparagus around the salmon on the baking sheet.

Bake: Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the asparagus is tender-crisp.

Serve: Remove from the oven and serve immediately with lemon wedges on the side for squeezing over the salmon and asparagus.
