1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 small onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

2 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1-2 cups beef broth (adjust for thickness)

1 tbsp olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, or avocado

Instructions
 

Sauté the Beef: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon—about 5 minutes.

    Add Vegetables: Stir in the diced onion, garlic, and bell pepper. Cook for about 3 minutes until the vegetables begin to soften.

      Spice It Up: Add the chili powder, cumin, smoked paprika, salt, and black pepper. Stir well to combine and cook for an additional 2 minutes to release the spices’ flavors.

        Combine Ingredients: Pour in the diced tomatoes (with juice), kidney beans, black beans, and beef broth. Stir everything together until well mixed.

          Simmer: Bring the chili to a gentle boil. Reduce heat to low and let it simmer uncovered for 10-15 minutes, allowing the flavors to meld. If you prefer a thicker chili, allow the broth to reduce longer.

            Adjust Seasoning: Taste the chili and adjust seasoning if necessary. If it’s too thick, add more beef broth to reach your desired consistency.
