Ingredients

8 large lasagna noodles

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

1 egg

2 cups marinara sauce (store-bought or homemade)

1 tablespoon Italian seasoning

Salt and pepper, to taste

Fresh basil or parsley, for garnish (optional)

Instructions

Cook the Noodles: Bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel to cool.

Prepare the Cheese Mixture: In a mixing bowl, combine ricotta cheese, 1 cup of mozzarella cheese, grated Parmesan cheese, egg, Italian seasoning, salt, and pepper. Mix well until all ingredients are evenly combined.

Assemble the Roll-Ups: Preheat your oven to 375°F (190°C). Spread a thin layer of marinara sauce on the bottom of a baking dish. Take one noodle and spread about 2-3 tablespoons of the cheese mixture evenly across its length. Carefully roll the noodle up from one end to the other, ensuring the filling stays inside.

Arrange in Baking Dish: Place the rolled noodle seam-side down in the baking dish. Repeat with the remaining noodles and cheese mixture. Pour the remaining marinara sauce over the top of the roll-ups, ensuring they are sufficiently covered.

Add Cheese Topping: Sprinkle the remaining mozzarella cheese over the marinara sauce for a cheesy topping.

Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. After that, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.

Serve: Once baked, let the lasagna roll-ups cool for a few minutes. Garnish with fresh basil or parsley if desired. Serve warm and enjoy!
