Easy Chicken Alfredo with Broccoli

8 oz fettuccine pasta

1 lb boneless, skinless chicken breasts, sliced into strips

2 cups fresh broccoli florets

3 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente. Add the broccoli florets to the pasta pot during the last 3 minutes of cooking. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Prepare the Alfredo Sauce: In the same skillet, add the remaining tablespoon of olive oil and sauté the minced garlic for about 30 seconds until fragrant. Pour in the heavy cream and bring to a gentle simmer.

        Add Cheese: Stir in the grated Parmesan cheese and let it melt into the cream, stirring continuously until the sauce is thick and creamy. If the sauce is too thick, you can add a little pasta water to reach your desired consistency.

          Combine: Return the cooked chicken and the drained fettuccine with broccoli to the skillet. Toss everything together until well coated in the Alfredo sauce, adding extra salt and pepper to taste.

            Serve: Plate the pasta, garnishing with freshly chopped parsley for a pop of color. Optionally, sprinkle more Parmesan cheese on top and serve warm.
