2 medium zucchinis, spiralized into noodles (zoodles)

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

2 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional, for added freshness)

Prepare the Zoodles: Using a spiralizer, create zoodles from the zucchinis. Place them in a colander and sprinkle with a bit of salt. Let them sit for about 10 minutes to release excess moisture.

    Cook the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the sliced chicken with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes or until browned and cooked through. Remove the chicken from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, stirring gently.
