1 lb boneless, skinless chicken breasts, sliced into strips

2 tablespoons olive oil

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon paprika

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper, to taste

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 cups cooked brown rice (or white rice)

1 cup corn (fresh, frozen, or canned)

1 can (15 oz) black beans, rinsed and drained

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped (optional for garnish)

Lime wedges, for serving

Avocado slices or guacamole (optional)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the sliced chicken with olive oil, cumin, chili powder, paprika, garlic powder, onion powder, salt, and pepper. Toss well to coat. Let it marinate for about 10-15 minutes while you prepare the vegetables.

    Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken strips and cook for 5-7 minutes, or until cooked through and slightly browned. Remove the chicken from the skillet and set it aside.

      Sauté the Veggies: In the same skillet, add the sliced bell peppers and onion. Sauté for about 4-5 minutes until they start to soften. Add the corn and sauté for another 2-3 minutes until everything is heated through.

        Combine Everything: Return the cooked chicken to the skillet with the vegetables. Stir everything together and cook for an additional 2-3 minutes to combine flavors.
