2 cups cooked white or brown rice

1 pound boneless, skinless chicken breasts, diced

1 medium onion, sliced

1 bell pepper (red or green), sliced

2 cloves garlic, minced

1 tablespoon olive oil

1 packet (1 oz) fajita seasoning mix

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or canned)

1 cup salsa

1 cup shredded Mexican cheese blend

1/4 cup fresh cilantro, chopped (optional for garnish)

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Chicken and Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced chicken and season with salt, pepper, and fajita seasoning. Cook until the chicken starts to brown (about 5-7 minutes). Add the sliced onion, bell pepper, and minced garlic, and sauté for another 3-4 minutes until the vegetables are tender.

      Combine Ingredients: In a large mixing bowl, combine the cooked rice, sautéed chicken and vegetables, black beans, corn, and salsa. Stir until all ingredients are well mixed. Taste and adjust seasoning if needed.

        Transfer to Baking Dish: Spread the rice mixture evenly in a greased 9x13-inch baking dish. Sprinkle the shredded cheese over the top.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
