1 large cucumber, thinly sliced

8 slices of sandwich bread (white or whole grain)

4 oz cream cheese, softened

2 tbsp fresh dill, chopped (or 1 tsp dried dill)

1 tsp lemon juice

Salt and pepper to taste

Optional: lettuce leaves or microgreens for added crunch

Prepare the Cream Cheese Mixture: In a medium bowl, combine the softened cream cheese, fresh dill, lemon juice, and a pinch of salt and pepper. Mix until smooth and well-blended.

    Slice the Cucumber: Thinly slice the cucumber using a sharp knife or mandoline for even thickness. Place the slices on a paper towel to absorb excess moisture.

      Assemble the Sandwiches:

        - Lay out 4 slices of bread on a clean surface.

          - Spread a generous amount of the cream cheese mixture on each slice.

            - Layer the cucumber slices on top of the cream cheese, overlapping them slightly for good coverage.

              - If using, place lettuce leaves or microgreens on top of the cucumbers.

                - Top with the remaining 4 slices of bread to create sandwiches.

                  Cut and Serve: Using a sharp knife, cut each sandwich into quarters or triangles for easy eating. You can trim the crusts if you prefer a more polished look.
