Easy Egg and Veggie Breakfast Burritos

4 large eggs

1 cup fresh spinach, chopped

1/2 bell pepper (red or green), diced

1/4 cup onion, finely chopped

1/2 cup cherry tomatoes, halved

1/4 cup shredded cheese (cheddar or Mexican blend)

4 whole-wheat tortillas (8-inch size)

1 tablespoon olive oil

Salt and pepper, to taste

Optional toppings: salsa, avocado, sour cream

Prepare the Veggies: In a medium bowl, combine the chopped spinach, diced bell pepper, onion, and cherry tomatoes. Set aside.

    Whisk the Eggs: In another bowl, crack the eggs and whisk them together until well beaten. Season with a pinch of salt and pepper.

      Cook the Veggies: Heat olive oil in a medium skillet over medium heat. Add the onion and bell pepper, sautéing for about 3-4 minutes until softened. Add the spinach and cherry tomatoes, and cook for an additional 2-3 minutes until the spinach is wilted.

        Add Eggs: Pour the beaten eggs over the sautéed veggies in the skillet. Cook, stirring gently, for about 3-5 minutes until the eggs are scrambled and fully cooked.
