Easy Greek Chicken Gyro

For the Chicken Marinade:

1 lb (450g) boneless, skinless chicken thighs

3 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

Juice of 1 lemon

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

½ cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon vinegar

1 tablespoon fresh dill, chopped (or 1 teaspoon dried)

Salt and pepper to taste

For Assembling:

4 large pita breads

1 cup fresh lettuce, shredded

1 medium tomato, diced

½ red onion, thinly sliced

Feta cheese, crumbled (optional)

Kalamata olives (optional)

Instructions
 

Marinate the Chicken:

    - In a large bowl, whisk together olive oil, minced garlic, oregano, cumin, smoked paprika, lemon juice, salt, and pepper.

      - Add chicken thighs to the bowl, ensuring they are well coated.

        - Cover and marinate in the refrigerator for at least 30 minutes (up to overnight for more flavor).

          Prepare the Tzatziki Sauce:

            - In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, vinegar, dill, salt, and pepper.

              - Mix well and set aside in the refrigerator to let flavors meld.

                Cook the Chicken:

                  - Preheat your grill or skillet over medium-high heat.

                    - Remove chicken from the marinade and cook for 6-7 minutes on each side until fully cooked and golden brown on the outside (internal temperature should reach 165°F/75°C).

                      - Once done, allow the chicken to rest for a few minutes before slicing it into thin strips.

                        Assemble the Gyros:

                          - Warm the pita breads on the grill or in a dry skillet briefly until soft.

                            - Layer a generous amount of shredded lettuce, diced tomato, sliced red onion, and sliced chicken in the center of each pita.

                              - Top with tzatziki sauce, crumbled feta, and Kalamata olives, if desired.

                                Serve:

                                  - Roll or fold the pita around the filling and serve immediately with extra tzatziki on the side.
