Easy Grilled Thai Chicken Skewers

Ingredients
  

1 pound boneless, skinless chicken thighs, cut into 1-inch cubes

1/4 cup coconut milk

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon fish sauce

1 tablespoon brown sugar

1 tablespoon lime juice

1 tablespoon red curry paste

2 garlic cloves, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon ground cumin

1/4 teaspoon black pepper

Bamboo or metal skewers (if using bamboo, soak them in water for 30 minutes prior)

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Marinade: In a large mixing bowl, whisk together the coconut milk, soy sauce, fish sauce, brown sugar, lime juice, red curry paste, minced garlic, grated ginger, ground cumin, and black pepper until well combined.

    Marinate the Chicken: Add the cubed chicken thighs to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.

      Prepare the Grill: Preheat your grill to medium-high heat. If using charcoal, wait until the coals are glowing and covered with ash. If using a gas grill, preheat for about 10 minutes.

        Skewer the Chicken: Thread the marinated chicken pieces onto the skewers, leaving a little space between each cube to promote even cooking.

          Grill the Skewers: Place the skewers on the preheated grill. Grill for about 10-12 minutes, turning every few minutes, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

            Serve: Remove the skewers from the grill and let them rest for a couple of minutes. Garnish with fresh cilantro and serve with lime wedges on the side for squeezing over the top.
