Ingredients

1 lb chicken tenders

1 cup buttermilk

1 cup all-purpose flour

1 tsp paprika

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp cayenne pepper (optional for extra heat)

1 cup honey

1/4 cup hot sauce (such as Frank's RedHot)

1/2 cup unsalted butter, melted

1 tsp garlic powder (for the biscuits)

2 cups biscuit mix

1 cup shredded cheddar cheese (optional)

Fresh chives or parsley for garnish (optional)

Instructions

Marinate the Chicken: Begin by soaking the chicken tenders in buttermilk for at least 30 minutes to keep them moist and tender. For best flavor, marinate them for 1-2 hours.

Prepare the Hot Honey: In a small saucepan, combine the honey, hot sauce, and melted butter. Warm over low heat until just combined, stirring occasionally. Set aside.

Preheat the Oven: Preheat your oven to 425°F (220°C).

Make the Biscuit Dough: In a large bowl, combine the biscuit mix and garlic powder. If you're adding cheese, fold in the shredded cheddar at this point. Add water according to the package instructions until a soft dough forms.

Shape the Biscuits: On a lightly floured surface, gently pat the biscuit dough into a 1-inch thick rectangle. Use a biscuit cutter or a glass to cut out your biscuits. Transfer the biscuits to a baking sheet lined with parchment paper.

Fry the Chicken: In a shallow dish, mix the flour, paprika, garlic powder, onion powder, salt, pepper, and cayenne pepper. Remove chicken from buttermilk, letting excess drip off, then dredge each piece in the flour mixture, coating well.

Heat Oil: In a large skillet, pour enough oil to cover the bottom and heat over medium-high heat until shimmering (about 350°F/175°C).

Fry Chicken: Carefully add the coated chicken tenders to the skillet, cooking in batches if necessary. Fry for about 4-5 minutes per side or until golden brown and cooked through. Drain on paper towels.

Bake Biscuits: While the chicken is frying, bake the biscuits according to package instructions, usually around 10-12 minutes or until golden brown.

Assemble: Once everything is ready, slice the biscuits in half. Place a fried chicken tender in each biscuit and drizzle generously with the hot honey mixture.

Garnish & Serve: Sprinkle with fresh chives or parsley for a pop of color. Serve immediately and enjoy the sweet and spicy explosion of flavors!
