Easy Neapolitan Pasta Bake

12 oz (340g) penne pasta

2 cups marinara sauce (store-bought or homemade)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1/2 tsp dried oregano

1/2 tsp garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish

1 tbsp olive oil

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Prepare the sauce mixture: In a large mixing bowl, combine the marinara sauce, ricotta cheese, oregano, garlic powder, salt, and pepper. Stir until well combined.

        Add vegetables: Gently fold in the halved cherry tomatoes and diced zucchini into the sauce mixture.

          Combine pasta and sauce: In the same pot you used for the pasta, combine the drained penne with the sauce mixture. Stir to coat the pasta evenly with the sauce.

            Layer the bake: Lightly grease a 9x13 inch baking dish with olive oil. Pour half of the pasta mixture into the dish. Sprinkle half of the mozzarella and half of the Parmesan cheese over the first layer. Add the remaining pasta mixture on top.

              Top with cheese: Sprinkle the remaining mozzarella and Parmesan cheeses evenly over the top layer of pasta.

                Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

                  Garnish and serve: Once baked, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
