Zest of 1 lime (optional, for a citrus kick)

Fresh fruit or toasted coconut flakes (for garnish)

Rinse the Rice: In a fine-mesh strainer, rinse the Arborio rice under cold water until the water runs clear. This removes excess starch and helps achieve a creamier texture.

    Combine Ingredients: In a medium-sized saucepan, combine the rinsed rice, coconut milk, sugar, and salt. Stir to mix well.

      Cook the Rice: Bring the mixture to a gentle boil over medium heat. Once boiling, reduce the heat to low and cover the saucepan. Simmer for about 25-30 minutes, stirring occasionally to prevent sticking, until the rice is tender and the pudding has thickened to your desired consistency.
