8 oz large shrimp, peeled and deveined

8 rice paper wrappers

1 cup vermicelli noodles, cooked and cooled

1 cup lettuce leaves (such as romaine or butter lettuce)

1 cup fresh herbs (mint, cilantro, and basil)

1 medium carrot, julienned

1 small cucumber, julienned

1/4 cup sliced bell peppers (red or yellow for color)

1 avocado, sliced

Salt and pepper, to taste

For the Dipping Sauce:

1/4 cup hoisin sauce

1 tablespoon peanut butter

1 tablespoon lime juice

1 tablespoon water (adjust for thickness)

Chopped peanuts, for garnish (optional)

Cook the Shrimp: In a medium pan, bring water to a gentle boil. Add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Remove from heat, drain, and allow to cool. Season with salt and pepper.

    Prepare the Noodles: Cook the vermicelli noodles according to the package instructions. Drain and rinse with cold water to prevent sticking.

      Prep the Vegetables: While the shrimp cools, prepare the vegetables by julienning the carrots and cucumber. Cut the bell pepper into thin strips, and slice the avocado.

        Make the Dipping Sauce: In a small bowl, combine the hoisin sauce, peanut butter, lime juice, and water. Mix until smooth. Adjust the water to achieve your preferred consistency. Garnish with chopped peanuts if desired.

          Assemble the Spring Rolls: Fill a large shallow dish or plate with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it softens. Lay it flat on a clean surface.

            Layer Ingredients: Start by placing a few lettuce leaves at the lower edge of the wrapper. Add a small handful of vermicelli noodles, followed by a few shrimp, carrots, cucumber, bell peppers, and avocado slices. Top with fresh herbs.

              Roll It Up: Fold the sides of the rice paper inward over the filling, then roll it tightly from the bottom up to form a compact spring roll. Repeat the process for the remaining ingredients.
