Ingredients

2 cups fresh strawberries, hulled and sliced

2 tablespoons sugar

1 teaspoon lemon juice

1 pint vanilla ice cream, softened

1 pint strawberry ice cream, softened

1 package (10 oz) graham cracker crumbs

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

Whipped cream, for topping (optional)

Fresh strawberries, for garnish (optional)

Instructions

Prepare Strawberries: In a medium bowl, combine sliced strawberries, sugar, and lemon juice. Toss to coat and let sit for about 15 minutes to macerate.

Make Crust: In a separate bowl, mix together the graham cracker crumbs, melted butter, and vanilla extract until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan to form the crust. Freeze the crust for about 15 minutes to set.

Layer Ice Creams: Once the crust is set, spread the softened vanilla ice cream evenly over the crust. Then layer the macerated strawberries over the vanilla ice cream, distributing them evenly.

Add Strawberry Ice Cream: Next, spread the softened strawberry ice cream over the strawberries, smoothing it out evenly.

Freeze the Cake: Cover the cake with plastic wrap and freeze for at least 4 hours or until fully set. For best results, overnight freezing is recommended.

Serve: Before serving, let the cake sit at room temperature for about 10 minutes for easier slicing. Remove from the springform pan, and if desired, top with whipped cream and garnish with fresh strawberries.

Enjoy: Slice, serve, and enjoy your refreshing Easy Strawberry Ice Cream Cake!
