1 lb (450g) boneless chicken thighs or breasts, diced

2 cups cooked jasmine rice (or brown rice for a healthier version)

1 cup broccoli florets

1 cup bell peppers (red, yellow, or green), sliced

1 carrot, julienned

1 cup snap peas, trimmed

3 tablespoons vegetable oil (divided)

½ cup low-sodium teriyaki sauce

2 teaspoons minced ginger

2 teaspoons minced garlic

2 green onions, chopped (for garnish)

Sesame seeds (optional, for garnish)

Instructions
 

Cook the Rice: Begin by cooking your jasmine or brown rice according to package instructions. Once cooked, set aside and keep warm.

    Prepare the Chicken: In a large bowl, combine the diced chicken thighs or breasts with 1 tablespoon of vegetable oil, minced ginger, and minced garlic. Mix well to coat the chicken evenly.

      Sauté the Chicken: Heat a large skillet over medium-high heat. Add the remaining 2 tablespoons of vegetable oil. Once hot, add the marinated chicken to the skillet. Cook for 5-7 minutes until the chicken is browned and cooked through, stirring frequently.

        Add Veggies: Once the chicken is cooked, push it to one side of the skillet and add the broccoli, bell peppers, carrot, and snap peas to the empty side. Stir-fry the vegetables for about 4-5 minutes until they are tender-crisp.

          Combine and Sauce Up: Pour the teriyaki sauce over the chicken and vegetables, stirring everything together to coat. Let it simmer for an additional 2-3 minutes to heat through, allowing the flavors to meld.
