1 lb boneless, skinless chicken thighs (or breasts), cut into bite-sized pieces

1 cup long-grain white rice

2 cups water or chicken broth

1/4 cup soy sauce

1/4 cup mirin (Japanese sweet rice wine)

2 tablespoons brown sugar

1 tablespoon sesame oil

2 cloves garlic, minced

1-inch piece of ginger, grated

1 tablespoon cornstarch mixed with 2 tablespoons water (optional for thickening)

1 cup broccoli florets

1 carrot, thinly sliced

1/2 bell pepper, sliced (any color)

Sesame seeds for garnish

Green onions, sliced for garnish

Salt and pepper to taste

Instructions
 

Cook the Rice: In a medium saucepan, combine the rice and water or chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked and liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Teriyaki Sauce: In a small bowl, whisk together soy sauce, mirin, brown sugar, minced garlic, grated ginger, and sesame oil. Set aside.

      Cook the Chicken: In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-7 minutes.

        Add Vegetables: Add the broccoli, carrot, and bell pepper to the skillet with the chicken. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
