1 lb ground turkey

1 tbsp olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 packet taco seasoning (or homemade)

1 cup diced tomatoes (canned or fresh)

1 cup black beans, rinsed and drained

1 cup corn (canned or frozen)

Salt and pepper to taste

1 head of romaine lettuce, leaves separated

1 avocado, sliced

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
