Ingredients

1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

2 cups fresh or frozen corn kernels

2 cups diced potatoes (Yukon Gold or red potatoes work well)

1 cup chopped carrots

1 cup chopped celery

1 medium onion, diced

3 garlic cloves, minced

4 cups low-sodium chicken broth

1 tsp dried thyme

1 tsp dried rosemary

1 tsp smoked paprika

Salt and pepper to taste

1 cup heavy cream (optional for creaminess)

Fresh parsley, chopped (for garnish)

Instructions

Prep the Ingredients: Start by preparing all the vegetables. Chop the onion, garlic, carrots, and celery. Dice the potatoes into bite-sized pieces and cut the chicken thighs into chunks.

Layer the Crockpot: In the crockpot, layer the diced potatoes, followed by the chopped carrots, celery, onion, and corn. Then, add the chicken pieces on top.

Season: Sprinkle the dried thyme, rosemary, smoked paprika, salt, and pepper over the chicken and vegetables.

Add Broth: Pour the chicken broth over the entire mixture, ensuring the ingredients are well covered. Give it a gentle stir to combine slightly.

Cooking Time: Cover the crockpot with the lid and set it to cook on low for 6-8 hours or on high for 4-5 hours, until the chicken and vegetables are tender.

Finishing Touch: About 30 minutes before serving, stir in the heavy cream if you want a creamy stew. Taste and adjust the seasoning with more salt and pepper if necessary.

Serve: Ladle the stew into bowls and garnish with freshly chopped parsley before serving.

Enjoy: Pair with crusty bread or salad for a complete meal!
