Ingredients

2 pounds baby carrots (or sliced regular carrots)

1/4 cup pure maple syrup

3 tablespoons unsalted butter

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh thyme leaves (plus extra for garnish)

1/4 cup vegetable broth or water

Instructions

Prepare the Carrots: Rinse the baby carrots thoroughly and pat them dry. If using regular carrots, peel and cut them into uniform sizes (about 1-inch pieces).

Mix the Glaze: In a small bowl, whisk together the maple syrup, melted butter, cinnamon, nutmeg, salt, and black pepper until well combined.

Layer in the Crockpot: Place the carrots in the crockpot. Pour the maple glaze over the carrots and gently toss to coat evenly. Add the vegetable broth or water to the bottom of the crockpot to help create steam for cooking.

Add Thyme: Sprinkle the fresh thyme leaves over the top of the carrots.

Cook Slow: Cover the crockpot with the lid and set it to low heat. Cook for 4-5 hours, or until the carrots are tender and infused with the maple glaze. If you're short on time, you can cook on high for about 2-3 hours.

Serve: Once cooked, gently stir the carrots to redistribue the glaze. Transfer to a serving dish and sprinkle with additional fresh thyme leaves for garnish if desired.

Enjoy: Serve warm as a delicious side dish for your fall gatherings or family dinners!
