1 lb (450g) boneless, skinless chicken breasts, thinly sliced

1 cup shredded carrots

1 cup bell peppers, thinly sliced (mix of red, yellow, and green)

3 green onions, chopped

2 cloves garlic, minced

2 tbsp fresh ginger, minced

1/4 cup soy sauce

2 tbsp hoisin sauce

2 tbsp sriracha sauce (adjust to taste)

1 tbsp rice vinegar

1 tbsp sesame oil

4 large lettuce leaves (for wrapping)

1/4 cup cilantro leaves (for garnish)

1/4 cup peanuts, crushed (optional for topping)

Salt and pepper, to taste

Olive oil, for cooking

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken, soy sauce, hoisin sauce, sriracha, rice vinegar, sesame oil, minced garlic, minced ginger, salt, and pepper. Mix well and let marinate for at least 30 minutes in the refrigerator.

    Cook the Chicken: Heat a tablespoon of olive oil in a skillet over medium-high heat. Add the marinated chicken to the skillet. Cook for about 5-7 minutes, or until the chicken is cooked through and slightly caramelized. Stir occasionally to prevent sticking.

      Add Vegetables: Toss in the shredded carrots and sliced bell peppers to the chicken in the skillet. Stir-fry for an additional 3-4 minutes until the veggies are tender yet crunchy.

        Prepare the Wraps: While the chicken and veggies are cooking, rinse and pat dry the lettuce leaves. Lay them flat on a clean surface or plate.

          Assemble the Wraps: Spoon a generous portion of the chicken and veggie mixture onto the center of each lettuce leaf. Top with chopped green onions and cilantro leaves. Optionally, sprinkle some crushed peanuts for added crunch.
