Ingredients

1 cup all-purpose flour

2 tablespoons granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk, at room temperature

1 large egg, at room temperature

2 tablespoons unsalted butter, melted and slightly cooled

1 teaspoon pure vanilla extract

Additional butter or oil for frying (optional)

Instructions

Mix the Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Whisk the Wet Ingredients: In another bowl, beat together the buttermilk, egg, melted butter, and vanilla extract until smooth and creamy.

Combine: Pour the wet ingredients into the dry ingredients. Gently fold the mixture together using a spatula or wooden spoon just until combined. Be careful not to over-mix; it’s okay if there are a few lumps in the batter.

Rest the Batter: Let the batter sit for about 5-10 minutes. This allows the baking powder and baking soda to activate and helps to achieve fluffiness.

Preheat the Pan: While the batter rests, heat a non-stick skillet or griddle over medium heat. If desired, add a small amount of butter or oil to coat the surface lightly.

Cook the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Carefully flip the pancakes and cook for another 1-2 minutes on the other side, until golden brown.

Keep Warm: If making multiple pancakes, you can keep them warm in a low oven (around 200°F or 95°C) while you finish cooking the rest.

Serve: Serve the pancakes hot with your favorite toppings, like maple syrup, fresh berries, whipped cream, or a sprinkle of powdered sugar.
