1 cup ricotta cheese

3/4 cup milk

3 large eggs, separated

Zest of 2 lemons

1/4 cup freshly squeezed lemon juice

1 teaspoon vanilla extract

1 cup all-purpose flour

1 tablespoon sugar

1 tablespoon baking powder

1/4 teaspoon salt

Butter or oil, for cooking

In a large mixing bowl, combine the ricotta cheese, milk, egg yolks, lemon zest, lemon juice, and vanilla extract. Whisk until smooth and well combined.

    In a separate bowl, mix the all-purpose flour, sugar, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

      In another bowl, whisk the egg whites until soft peaks form. Gently fold the egg whites into the pancake batter, taking care not to deflate them. This step will ensure your pancakes are light and fluffy.

        Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

          Once the skillet is hot, pour about 1/3 cup of batter for each pancake onto the skillet. Cook for 2-3 minutes or until bubbles form on the surface, then carefully flip and cook for an additional 2-3 minutes until golden brown.

            Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed.
