French Onion Beef Pasta Bake

8 oz elbow macaroni or any pasta of choice

1 lb ground beef

2 large onions, thinly sliced

3 cloves garlic, minced

2 cups beef broth

1 cup French onion soup (canned or homemade)

1 cup shredded Gruyère cheese (and additional for topping)

1 cup shredded mozzarella cheese

2 tbsp olive oil

1 tbsp Worcestershire sauce

1 tsp dried thyme

Salt and pepper, to taste

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and set aside.

      Caramelize the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt, cooking for about 20-25 minutes, stirring occasionally, until they are deep golden brown and caramelized. If they start to stick, you can add a splash of water or broth to deglaze the pan.

        Brown the Beef: Add the ground beef to the skillet with the caramelized onions and garlic. Cook until the beef is browned and cooked through. Drain any excess fat.

          Combine Ingredients: Stir in the Worcestershire sauce, thyme, beef broth, and French onion soup into the beef and onion mixture. Allow it to simmer for about 5 minutes, then season with salt and pepper to taste.

            Mix with Pasta: In a large mixing bowl, combine the cooked pasta with the beef and onion mixture. Add half of the Gruyère and mozzarella cheese, stirring until well mixed.

              Transfer to Baking Dish: Pour the pasta and beef mixture into a greased 9x13 inch baking dish, spreading it evenly.

                Add Cheese Topping: Sprinkle the remaining Gruyère and mozzarella cheese on top of the pasta mixture, covering it well.

                  Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                    Garnish and Serve: Remove from the oven and let the dish cool for a few minutes. Garnish with fresh parsley before serving.
