4 boneless, skinless chicken thighs

2 medium onions, thinly sliced

3 cloves garlic, minced

1 cup beef broth

1 cup Swiss cheese, shredded

2 tablespoons balsamic vinegar

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 tsp dried thyme)

1 teaspoon salt

½ teaspoon black pepper

¼ teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Prepare the Chicken: Season the chicken thighs with salt, pepper, and thyme. Set aside.

    Sauté the Onions: In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10-15 minutes, or until they are caramelized and golden brown.

      Add Garlic: Stir in the minced garlic and cook for another minute until fragrant.

        Deglaze the Pan: Pour in the balsamic vinegar, scraping the bottom of the skillet to release any browned bits. Cook for an additional 2 minutes.

          Add the Chicken: Push the onion mixture to the side of the skillet, then add the seasoned chicken thighs to the center. Sear for 4-5 minutes per side until golden brown.

            Simmer: Pour in the beef broth and bring to a gentle boil. Reduce heat to low, cover the skillet, and simmer for approximately 20-25 minutes until the chicken has reached an internal temperature of 165°F (75°C) and is cooked through.

              Add Cheese: Sprinkle the shredded Swiss cheese on top of the chicken, cover again, and let it melt for about 3-4 minutes.

                Serve: Once the cheese is melted and bubbly, garnish with fresh parsley and serve hot straight from the skillet.
