2 pounds baby potatoes (yellow or red), halved

1 cup fresh herbs (a mix of parsley, dill, chives, and basil), finely chopped

1/2 cup small red onion, finely diced

1 cup cherry tomatoes, halved

1/4 cup extra virgin olive oil

2 tablespoons Dijon mustard

1 tablespoon apple cider vinegar

1 tablespoon honey (or maple syrup for vegan)

Salt and black pepper to taste

Optional: 1/2 cup crumbled feta cheese

Instructions
 

Boil the Potatoes: In a large pot, bring salted water to a boil. Add the halved baby potatoes and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Prepare the Vinaigrette: In a small bowl, whisk together the olive oil, Dijon mustard, apple cider vinegar, and honey until well combined. Season with salt and pepper to taste.
