1 cup coconut milk (or almond milk)

1/4 cup chia seeds

2 tablespoons maple syrup (adjust to taste)

1 teaspoon vanilla extract

1 cup mixed frozen berries (such as strawberries, blueberries, and raspberries)

Fresh berries and mint leaves for garnish (optional)

Prepare the Chia Pudding Base: In a mixing bowl, whisk together the coconut milk, chia seeds, maple syrup, and vanilla extract. Ensure that the chia seeds are fully incorporated and not clumping together.

    Refrigerate: Cover the bowl with plastic wrap or a lid, and let the mixture sit in the refrigerator for at least 4 hours, or preferably overnight. This allows the chia seeds to expand and create a pudding-like consistency.

      Thaw the Berries: While the chia pudding is setting, place the frozen mixed berries in a small bowl and let them thaw at room temperature. This usually takes about 30 minutes. Alternatively, you can microwave them for 30 seconds to 1 minute until just softened.

        Assemble the Cups: Once the chia pudding has thickened, take it out of the refrigerator and give it a good stir. Using pint-sized cups or small glass jars, layer the chia pudding and thawed mixed berries. Start with a layer of chia pudding at the bottom, followed by a layer of berries, and repeat until the cups are filled. You can top each cup with a few fresh berries for an extra burst of flavor.

          Garnish: If desired, add a sprig of mint as a garnish on top of each cup for a pop of color and freshness.

            Serve or Freeze: Serve the berry chia pudding cups immediately or cover with a lid and place in the freezer if you want to enjoy them frozen later. If freezing, allow them to sit at room temperature for about 10 minutes before serving for easier eating.
