Ingredients

2 cups Greek yogurt (plain or flavored)

1 cup mixed frozen berries (strawberries, blueberries, raspberries, and blackberries)

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon vanilla extract

1/4 cup granola (for topping)

Fresh mint leaves (for garnish, optional)

Instructions

In a large mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir until the mixture is smooth and well combined.

Gently fold in the frozen mixed berries using a spatula, being careful not to break them up too much. The yogurt will start to take on a beautiful berry color as you mix.

Line a muffin tin with paper liners or silicone muffin cups. Spoon the yogurt and berry mixture evenly into each cup, filling them about three-quarters full.

Place the muffin tin in the freezer and let the yogurt cups freeze for at least 4 hours or until completely solid.

When ready to serve, remove the yogurt cups from the freezer and let them sit at room temperature for about 5 minutes to soften slightly.

Top each cup with a sprinkle of granola and a mint leaf for a pop of color and flavor.

Serve immediately and enjoy your delicious, healthy frozen treats!
