Frozen Blueberry Lemon Yogurt Bars

2 cups fresh or frozen blueberries

1 cup plain Greek yogurt (or your favorite yogurt)

1/2 cup honey or maple syrup (adjust sweetness to taste)

Zest of 1 lemon

1/4 cup fresh lemon juice (about 2 lemons)

1 teaspoon vanilla extract

1/4 teaspoon salt

Optional: 1/2 cup granola or crushed nuts for topping

Prepare the Blueberries: If using fresh blueberries, rinse them thoroughly and set aside. If using frozen, thaw them slightly and drain excess water.

    Blend the Yogurt Mixture: In a blender or food processor, combine the Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and salt. Blend until smooth and creamy.

      Mix in Blueberries: Gently fold in the blueberries to the yogurt mixture. You can slightly mash some of the blueberries to create a marbled effect, leaving some whole for texture.

        Line the Pan: Line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal.

          Pour Mixture into Pan: Spread the yogurt and blueberry mixture evenly into the prepared baking dish, smoothing the top with a spatula. If desired, sprinkle granola or crushed nuts evenly over the top for added crunch.

            Freeze: Place the dish in the freezer for at least 4-6 hours, or until the bars are firm.

              Cut into Bars: Once frozen, lift the yogurt block out of the pan using the parchment paper. Cut into squares or bars with a sharp knife, wiping the knife between cuts for clean edges.

                Serve & Store: Enjoy immediately or store the bars in an airtight container in the freezer for up to one month. Let them sit at room temperature for a few minutes before serving for easy biting!
