Oats are celebrated for their impressive nutritional profile. They are rich in dietary fiber, which aids in digestion and helps maintain a healthy weight by keeping you feeling fuller for longer. Additionally, oats contain beta-glucans, a type of soluble fiber that has been shown to lower cholesterol levels and support heart health. When used as a base for desserts, oatmeal provides a satisfying texture and a wholesome flavor that pairs beautifully with sweet toppings and fillings.

Ingredients

2 cups rolled oats

1 cup all-purpose flour

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/4 cup honey or maple syrup

1 cup frozen blueberries (if using fresh, increase cooking time slightly)

1 tablespoon lemon juice

1 teaspoon vanilla extract

Instructions

Preheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish or line it with parchment paper for easy removal.

Prepare the blueberry filling: In a medium bowl, combine the frozen blueberries, lemon juice, and 1 tablespoon of sugar (optional, based on your sweetness preference). Gently toss to coat the blueberries. Set aside to marinate while you prepare the crumble base.

Mix the dry ingredients: In a large bowl, whisk together the rolled oats, all-purpose flour, brown sugar, granulated sugar, ground cinnamon, and salt until evenly combined.

Incorporate the wet ingredients: Pour the melted butter, honey or maple syrup, and vanilla extract into the dry ingredients. Stir with a spatula or fork until the mixture resembles wet sand and is thoroughly combined.

Assemble the layers: Press about two-thirds of the oat mixture into the bottom of the prepared baking dish in an even layer. It should be firm and compact. Next, spread the blueberry mixture evenly over the pressed oat layer.

Add the crumble topping: Crumble the remaining oat mixture over the blueberry layer, making sure to leave some areas exposed for a nice crumble effect.

Bake the crumble slices: Place the baking dish in the preheated oven and bake for 25-30 minutes or until the topping is golden brown and the blueberries are bubbling slightly.

Cool and slice: Once done, remove from the oven and allow the crumble to cool for about 15-20 minutes. For cleaner slices, you can refrigerate it for an additional hour before slicing. Cut into squares or rectangle slices as preferred.

Store or freeze: These slices can be served warm or at room temperature. For later enjoyment, store them in an airtight container in the fridge forup to a week or freeze for up to 3 months.

Enjoy your delicious, homemade Frozen Blueberry Oatmeal Crumble Slices as a sweet treat or a nutritious snack throughout the week!
