2 cups grated carrots (about 3 medium carrots)

1 cup Greek yogurt (plain or vanilla)

1 cup full-fat coconut milk

1/2 cup honey or maple syrup (adjust for sweetness)

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup rolled oats

1/2 cup chopped walnuts or pecans (optional)

1/2 cup raisins or dried cranberries (optional)

Instructions
 

Prepare the Carrots: Start by peeling and grating the carrots finely. You can use a box grater or a food processor with the grating attachment.

    Mix the Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, coconut milk, honey (or maple syrup), and vanilla extract. Whisk until smooth and well blended.

      Add the Spices: Into the same bowl, stir in the ground cinnamon, nutmeg, ginger, and salt, mixing well to ensure all the spices are evenly distributed.

        Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, grated carrots, chopped nuts, and raisins or dried cranberries (if using).

          Combine All Ingredients: Slowly add the dry ingredients to the wet ingredients, stirring until the mixture is evenly combined.
