Ingredients

4 ripe kiwis, peeled and sliced into 1/2-inch rounds

1 cup dark chocolate chips (or milk chocolate, if preferred)

1 tablespoon coconut oil (optional, for smooth melting)

1/4 cup crushed nuts (such as almonds or pistachios)

1/4 cup shredded coconut (unsweetened)

Popsicle sticks or small wooden skewers

Instructions

Prep the Kiwis: Start by peeling and slicing the kiwis into 1/2-inch rounds. It's important to keep them thick enough so they hold together during freezing.

Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted and smooth.

Dip the Kiwis: Take each kiwi slice and dip it halfway into the melted chocolate, allowing any excess chocolate to drip off. You can use a fork or skewer to help with this process.

Add Toppings: Immediately after dipping, sprinkle the crushed nuts and shredded coconut onto the chocolate-coated portion of the kiwi. Press gently to ensure the toppings adhere well.

Insert Sticks: Carefully insert a popsicle stick or wooden skewer into the bottom of each kiwi slice, being cautious not to push it all the way through.

Freeze: Place the kiwi pops on a parchment-lined baking sheet. Freeze for at least 2 hours or until completely solid.

Serve: Once frozen, remove the pops from the parchment and enjoy them immediately, or store them in an airtight container in the freezer for up to a week.
