Ingredients

2 cups plain Greek yogurt (or any yogurt of your choice)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure peppermint extract

1 cup dark chocolate chips (or milk chocolate for a sweeter option)

1 tablespoon coconut oil (for melting chocolate)

A pinch of sea salt

½ cup crushed peppermint candies or crushed nuts (optional for topping)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Yogurt Mixture:

    - In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and peppermint extract. Stir until well blended and smooth.

      Spread the Yogurt:

        - Line a baking sheet (approximately 9x13 inches) with parchment paper. Pour the yogurt mixture onto the parchment and spread it evenly with a spatula, creating a layer about ½ inch thick.

          Melt the Chocolate:

            - In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave on high for 30 seconds, then stir. Continue to microwave in 15-second intervals, stirring in between until the chocolate is completely melted and smooth.

              Drizzle the Chocolate:

                - Carefully pour the melted chocolate over the yogurt layer. Use a spatula or the back of a spoon to swirl the chocolate into the yogurt for a marbled effect.

                  Add Toppings:

                    - Sprinkle the crushed peppermint candies or nuts over the top, followed by a pinch of sea salt for extra flavor. If using, add fresh mint leaves for a pop of color.

                      Freeze:

                        - Place the baking sheet in the freezer and let the yogurt bark freeze for at least 4 hours, or until completely firm.

                          Break and Serve:

                            - Once frozen, remove the yogurt bark from the freezer. Lift it out of the pan using the edges of the parchment paper and break it into pieces.

                              Enjoy:

                                - Serve immediately or store the pieces in an airtight container in the freezer for up to a month. Enjoy as a refreshing treat!
