Ingredients

1 cup fresh strawberries, hulled and diced

1 ½ cups Greek yogurt (plain or vanilla)

¼ cup honey or maple syrup (adjust based on sweetness preference)

1 teaspoon pure vanilla extract

1 cup dark chocolate chips (or dairy-free chocolate chips for vegan option)

1 tablespoon coconut oil (for melting chocolate)

Pinch of sea salt

Optional toppings: crushed nuts, coconut flakes, or sprinkles

Instructions

Prepare the Strawberry Mixture: In a mixing bowl, combine the diced strawberries, Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well until the strawberries are evenly distributed throughout the yogurt. Taste and adjust sweetness if needed.

Form the Truffles: Using a small cookie scoop or tablespoon, portion out the yogurt mixture and roll them into balls between your palms. Place the truffles on a parchment-lined baking sheet. You should get about 20-24 truffles depending on size.

Freeze the Truffles: Once rolled, place the baking sheet in the freezer and let the truffles freeze for at least 2-3 hours, or until firm.

Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until completely melted and smooth. Be cautious not to overheat the chocolate.

Coat the Truffles: Remove the frozen truffles from the freezer. Using a fork or toothpick, dip each truffle into the melted chocolate, allowing the excess chocolate to drip off. Carefully place the coated truffles back on the parchment-lined sheet.

Add Toppings: If desired, sprinkle crushed nuts, coconut flakes, or sprinkles over the coated truffles before the chocolate hardens.

Final Freezing: Once all the truffles are coated, return them to the freezer for about 30 minutes to set the chocolate.

Serve: After the chocolate has hardened, transfer the truffles to an airtight container and store them in the freezer. Enjoy straight from the freezer as a refreshing treat!
