Ingredients
  

1 cup full-fat coconut milk

1/2 cup Greek yogurt (plain)

1/3 cup honey or maple syrup

Zest of 2 limes

1/4 cup fresh lime juice (about 2 limes)

1 teaspoon pure vanilla extract

1/2 cup shredded unsweetened coconut

Pinch of sea salt

Optional: lime wedges and additional shredded coconut for garnish

Instructions
 

In a medium mixing bowl, combine the full-fat coconut milk, Greek yogurt, honey or maple syrup, lime zest, lime juice, and vanilla extract. Whisk until smooth and well blended.

    Fold in the shredded coconut and a pinch of sea salt. Make sure the coconut is evenly distributed throughout the mixture.

      Pour the mixture evenly into silicone muffin cups or small dessert cups, filling them about 3/4 full.

        Tap the cups gently on the counter to release any air bubbles that might be trapped inside.

          Place the filled cups in the freezer and let them freeze for at least 4-6 hours or until solid.

            To serve, remove the cups from the freezer and let them sit at room temperature for 5-10 minutes. This will make it easier to remove the frozen cups from the molds.

              Carefully peel away the silicone or cup, and place the frozen coconut lime cream cups on serving plates.

                Optional: Garnish with lime wedges and a sprinkle of additional shredded coconut for an extra tropical touch.
