2 cups of fresh strawberries, hulled and sliced

2 cups of fresh pineapple chunks

1 cup of blueberries

1 cup of kiwi, peeled and diced

1 banana, sliced

1 cup of coconut water or fruit juice (orange or pineapple)

1 tablespoon of honey or maple syrup (optional, adjust to taste)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Fruit: In a large mixing bowl, combine the strawberries, pineapple, blueberries, kiwi, and banana. Toss gently to mix the fruits evenly.

    Sweeten the Mix: In a separate small bowl, whisk together the coconut water (or fruit juice) with the honey or maple syrup until well combined. Pour this mixture over the fruit in the large bowl and toss gently to coat the fruits evenly.

      Fill the Cups: Take small paper or silicone cups (around 3-4 oz size) and scoop a generous portion of the fruit mixture into each cup. Leave a little space at the top to allow for expansion as they freeze.

        Freeze: Place the filled cups in the freezer for about 3-4 hours, or until completely frozen.

          Serve: Once frozen, remove the cups from the freezer and let them sit at room temperature for a few minutes to soften slightly. Run a warm knife around the edge of the cups if needed. Garnish with fresh mint leaves before serving.
