Frozen Greek Yogurt Cappuccino Pops

Ingredients
  

2 cups plain Greek yogurt

1 cup brewed espresso or strong coffee, cooled

1/2 cup milk (dairy or non-dairy)

1/4 cup honey or maple syrup (to taste)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of sea salt

Optional: chocolate shavings or finely chopped nuts for garnish

Instructions
 

Prepare the Coffee Base: In a mixing bowl, whisk together the brewed espresso (or coffee) and milk until well combined. Make sure the coffee is cooled to room temperature to prevent the yogurt from melting.

    Mix the Yogurt: In a separate large bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, and sea salt. Use a whisk or an electric mixer on low speed to blend until smooth and creamy.

      Combine the Mixtures: Gradually fold the coffee mixture into the yogurt mixture until you achieve a uniform consistency. Be careful not to over-mix as you want to maintain some of those creamy yogurt swirls.

        Pour into Molds: Carefully pour or spoon the mixture into popsicle molds, leaving a little space at the top for expansion. If desired, sprinkle in chocolate shavings or nuts for texture at this stage.

          Insert Sticks: Place the popsicle sticks into each mold. If your molds don’t come with sticks, you can freeze for about 1 hour until slightly firm, then insert the sticks.

            Freeze: Cover with a lid or layer of plastic wrap and freeze for at least 6 hours, or until completely solid.

              Unmold the Pops: To remove the pops from the molds, run warm water over the outside of the molds for a few seconds to loosen them. Carefully pull out the popsicles.

                Serve: Enjoy your delicious Greek Yogurt Cappuccino Pops right away! They can be garnished with a dash of cinnamon or more chocolate shavings for an extra touch.
