4 ripe kiwis, peeled and sliced

2 cups fresh strawberries, hulled and sliced

1/4 cup honey (or agave syrup for vegan option)

1 cup coconut water (or regular water)

1 tablespoon fresh lime juice

Optional: small mint leaves for garnish

Instructions
 

Prepare the Fruit: In a blender, combine the sliced kiwis and half of the strawberries. Add half of the honey and 1/2 cup of coconut water. Blend until smooth.

    Layer the Mixture: In your popsicle molds, pour the kiwi mixture about 1/3 full. Freeze for about 1 hour or until slightly firm.

      Strawberry Layer: In the same blender (no need to clean), add the remaining strawberries, the other half of the honey, the rest of the coconut water, and the lime juice. Blend until smooth.

        Pour Strawberry Layer: Take the molds out of the freezer and gently pour the strawberry mixture over the kiwi layer, filling the molds up to the top.

          Mix It Up (Optional): For a swirled effect, you can take a skewer or knife and gently swirl the kiwi and strawberry mixtures together slightly, but be careful not to overmix.

            Add Garnish (Optional): Place small mint leaves on top for a refreshing touch.

              Freeze Again: Insert sticks into the molds and freeze for at least 4-6 hours, or until completely solid.

                Serve: To release the pops, run warm water over the outside of the molds for a few seconds. Enjoy your Kiwi Strawberry Chill Pops on a hot day!
