1 cup plain Greek yogurt

1/4 cup honey or maple syrup

1/2 cup fresh lemon juice (about 2-3 lemons)

Zest of one lemon

1/4 cup chia seeds

1 teaspoon vanilla extract

Pinch of salt

In a mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), fresh lemon juice, lemon zest, vanilla extract, and a pinch of salt until well combined.

    Gently fold in the chia seeds, mixing until they are evenly distributed throughout the yogurt mixture.

      Line a mini muffin tray or silicone mold with parchment paper or lightly grease it with cooking spray to make removing the bites easier after freezing.

        Spoon the lemon yogurt mixture into each compartment of the tray or mold, filling them about 3/4 full.

          Smooth the tops with the back of a spoon or spatula for an even finish.

            Cover the tray or mold with plastic wrap or a lid and place it in the freezer. Let it freeze for at least 4-6 hours, or until firm.

              Once frozen, remove the bites from the mold. If using a mini muffin tray, you can gently press the bottom to release the yogurt bites.

                Store the frozen lemon yogurt bites in an airtight container or a resealable freezer bag, separating layers with parchment paper to prevent sticking.
