Ingredients

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

2 cups creamy lemon yogurt (or lemon curd for a richer flavor)

1 (14 oz) can sweetened condensed milk

½ cup freshly squeezed lemon juice (about 3-4 lemons)

1 tsp vanilla extract

Zest of 1 lemon

Whipped cream, for topping (optional)

Lemon slices or zest, for garnish (optional)

Instructions

Prepare the Crust: In a medium mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and resemble wet sand. Press this mixture firmly into the bottom of a 9x9-inch baking dish to form an even crust. Refrigerate for about 15 minutes to set.

Mix the Filling: In a large mixing bowl, whisk together the lemon yogurt (or lemon curd), sweetened condensed milk, fresh lemon juice, vanilla extract, and lemon zest until smooth and well combined.

Combine and Pour: Once the crust has set, pour the lemon filling over the chilled crust, spreading it evenly with a spatula.

Freeze: Cover the baking dish with plastic wrap or aluminum foil and place it in the freezer. Allow the pie bars to freeze for at least 4–6 hours, or until fully set.

Cut and Serve: Once completely frozen, remove the pie from the freezer. Let it sit at room temperature for about 5 minutes to soften slightly, making it easier to cut. Slice into bars or squares.

Garnish (optional): Top with whipped cream and garnish with fresh lemon slices or zest before serving to add a delightful touch.

Enjoy: Serve the frozen lemonade pie bars immediately, and enjoy the refreshing burst of citrus on a warm day!
