2 ripe mangoes, peeled and chopped

1 cup Greek yogurt (plain or vanilla)

1/2 cup coconut milk (canned or carton)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (optional, adjust to taste)

1 teaspoon vanilla extract

A pinch of salt

Fresh mint leaves for garnish (optional)

Prepare the Mango Puree: In a blender, combine the chopped mangoes with a splash of coconut milk and blend until smooth. Set aside.

    Chia Mixture: In a medium bowl, combine the Greek yogurt, remaining coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and a pinch of salt. Mix well until all ingredients are fully incorporated. The chia seeds will begin to expand and create a thicker texture.
